How do you set the To email address that controls where submitted enquiry forms are emailed to when using a Enquiry Form content managed web page area?

On a content managed web page that contains an Enquiry Form area, after a user has filled out the form in the area and submitted it, how can an administrator user set the email address where the enquiry form email notification is submitted to?
